| Step 1: Mix Everything in Bowl |

| Step 2: Place 1/2 cup onto tortilla |

| Step 3: Place into 13 x 9 baking dish |

| Step 4: Put cheese on top of Enchiladas |

| Step 5: Pour can of enchilada sauce over cheese |
Pre-Heat oven to 375
ENCHILADAS
8-10 Totillas
1 Rotisserie Chicken, cooked and shredded
1 can cream of Chicken OR Cream of Chicken and Mushroom
8oz sour cream
1 bag mexican 4 cheese (2cups)
5-6 mushrooms
1/2- 1 can of chopped olives
1 can diced green chiles OR salsa verde to taste
Mix everything really well in large mixing bowl.
Spoon about 1/2 cup into tortilla and roll up.
Place into 13 x 9 baking dish.
TOPPING
1 small can Enchilada Sauce of your choosing Mild, Medium or Hot
1 bag mexican 4 cheese (2cups)
Put cheese on top of Enchiladas, and pour sauce over everything
Cook for 45 Min at 375.
Let cool for 10-15 minutes before serving.
Make excellent left overs!
