Creamy Cheesy Chicken Enchiladas

Step 1: Mix Everything in Bowl
Step 2: Place 1/2 cup onto tortilla

Step 3: Place into 13 x 9 baking dish
Step 4: Put cheese on top of Enchiladas

Step 5: Pour can of enchilada sauce over cheese

Pre-Heat oven to 375

ENCHILADAS
8-10 Totillas
1 Rotisserie Chicken, cooked and shredded
1 can cream of Chicken OR Cream of Chicken and Mushroom
8oz sour cream
1 bag mexican 4 cheese (2cups)
5-6 mushrooms
1/2- 1 can of chopped olives
1 can diced green chiles OR salsa verde to taste

Mix everything really well in large mixing bowl.
Spoon about 1/2 cup into tortilla and roll up.
Place into 13 x 9 baking dish.

TOPPING
1 small can Enchilada Sauce of your choosing Mild, Medium or Hot
1 bag mexican 4 cheese (2cups)

Put cheese on top of Enchiladas, and pour sauce over everything

Cook for 45 Min at 375.
Let cool for 10-15 minutes before serving.
Make excellent left overs!

Buffalo Chicken Bites

 
 
Ingredients:

3-4 Boneless Skinless Chicken Breasts (Fresh if possible)
1/4 cup butter
1/4 cup Buffalo Sauce
1 Box Italian Style Panko Breadcumbs

1. Preheat Oven to 375*. Grease baking pan
2. Rinse Chicken and pat dry. Cut into 1" cubes. Place into ziploc bag.
3. In small microwavable dish place 1/4 butter and 1/4 buffalo sauce and cook for 45 seconds.
4. Pour mixture over chicken in ziplock bag and make sure all pieces of chicken is covered with mixture. let stand for 15 minutes or put into refrigerator for later.
5. Transfer chicken to new bag or tupperware container. Pour box of Panko into bag/tupperware and shake to cover chicken.
6. Pour onto greased sheet and bake for 20 min or until chicken is done (180* internal degrees)

Easy Sugar Cookies


Preheat Oven to 425*
Spray Baking sheet with baking spray with flour

1/2 CUP BUTTER
3/4 CUP SUGAR
1 1/4 CUP FLOUR
1/4 TSP BAKING POWDER
1 EGG
1 TSP MILK

MILK ALL TOGETHER IN NO SPECIFIC ORDER IN MEDIUM SIZE BOWL
USE A 1 TBSP TO MAKE ROUND BALLS
PLACE ON BAKING SHEET 2" APART TO ALLOW ROOM FOR SPREADING
SMASH WITH GLASS BOTTOM DIPPED IN SUGAR

NOTE: IF YOU WANT TO SPICE THINGS UP A LITTLE BIT MIX TOGETHER 1/2 CUP SUGAR WITH 1 TBSP CINNAMON AND ROLL BALLS IN MIXTURE BEFORE BAKING.

BAKE FOR APPROXIMATELY 8 MIN OR UNTIL COOKIES ARE FIRM TO TOUCH.
